Instructions
  1. Put a large pot of salted water on to boil (1 Tbsp salt for every 2l of water.) Once the water has reached a rolling boil, add the dry pasta, and cook, uncovered until ad dente.
  2. While the water is coming to a boil, heat the oil in a large pan over medium heat. Add the bacon and cook slowly until crispy. Add the garlic and cook for another minute.
  3. In a small bowl, beat the eggs and mix in about half of the cheese.
  4. When the pasta is al dente, drain it quickly and add it into the bacon and garlic mix.
  5. Add the beaten eggs with cheese and toss quickly to combine once more. Add salt to taste. The pasta should be hot enough to cook the eggs, but not too hot that it curdles.
  6. Serve with the rest of the parmesan
